A new chapter for the large restaurant of the Gstaad Palace

2025 – The culinary heart of the Gstaad Palace is experiencing a dazzling rebirth: after a complete transformation between March and June 2025, the large restaurant has a new design. This one carries the brand of the renowned architects duo Fischbach & Aberegg, of Zug, who knew how to give this traditional restaurant a warm and modern atmosphere with a great sensitivity for the history and the spirit of time. A design in continuity of the revival of the large terrace of the Gstaad Palace, initiated by the two designers two years ago.

For this summer season, the Gstaad Palace has given a new stylistic orientation to its culinary heart, the large restaurant. Some 3.4 million francs were invested in this important transformation. This traditional restaurant has been redesigned both on the architectural level and at the level of the atmosphere. It continues to methodically carry the values of the house and makes the link exemplary between tradition and innovation.

A Swiss design for a Swiss luxury hotel

The elegant design is the work of the renowned architect duo Fischbach & Aberegg, which had already, in 2023, established an atmosphere full of freshness on the large terrace thanks to its subtle creativity. It was again with a lot of tact that he gave the big restaurant a classic design of timeless elegance. Hot materials, refined furniture and carefully integrated historical details create a welcoming atmosphere. “This new coat allows us to open a new chapter from our main restaurant. Fischbach & Aberegg showed once again that they knew their job. Their response to our needs and our history is suitable for perfection. We want to evolve with our time while preserving our values. This does not only concern design, but also our culinary offer, ”explains Andrea Scherz, General Manager and owner in the third generation.

A clear culinary offer: classics and table service

The large restaurant also remains faithful to the philosophy of its cuisine under the leadership of the Culinary Director Franz W. Faeh. Values such as tradition, authenticity and consistency remain central. Mr. Faeh and his team of 55 people continue to preserve the art of the classics and signature dishes that have proven themselves and are particularly appreciated and requested by their hosts. The new large restaurant offers a selection of 75 different dishes, an impressive culinary variety. The dishes prepared directly at the table such as the beef at the Chateaubriand, the Spaghetti Gildo or the Suzette pancakes are particularly highlighted. The table service, which has become very rare these days, is a target of the culinary offer.

A place open to the inhabitants at all times

The Gstaad Palace is very anchored in the region and the doors of its large restaurant have always been open to the local population. “Hotel restaurants have always been accessible to external customers. The inhabitants of GSTAAD are celebrating confirmations and business or business birthdays here. Chalet tenants in the region also like to visit us and vary the pleasures by tasting high gastronomy. Our new large restaurant will continue to promote this opening by creating an even warmer atmosphere inviting to spend a pleasant and style of style on the culinary plan, “said Andrea Scherz, who was himself born in Gstaad and spent his youth there.

Fischbach & Aberegg: style in the hotel service

Since its creation in 1994, the architectural office has forged a reputation both at national and international level. Specializing in interior architecture, architecture and design for hotels, restaurants, retail, institutions and individuals, he has led to many more than 200 projects in recent years for renowned customers. La famille Scherz et l’équipe du Gstaad Palace accueillent leurs hôtes cet été jusqu’au 4 septembre 2025, puis à nouveau du 15 décembre 2025 au 8 mars 2026 pour la saison d’hiver.
