“I came out emptied, tired, but happy!” Josselin Deprez de Gesincourt is delighted. This baker located in Saint-Gilles has just participated in the M6 program, the best bakery in France, which also stopped in Saint-Martin-en-Bresse a few days ago.
A former sommelier converted into a baker
“Production contacted me by social networks,” he rewinds. I found it great to be asked by this program because I do not work at all like a usual bakery. They are open to everything, have no preconceived ideas and love people who break the codes. »»
Because Josselin Deprez de Gesincourt, alias the infarry assistant, sells very little bread to his place of production in Saint-Gilles. It operates on order, “48 hours before”, and then delivered individuals, restaurants and shops. “Like that, no waste,” he says. I prepare exactly what I need as a bread. My catchment area goes to Creusot and Beaune. And I even send buns per package in Paris. »»
This former globetrotter sommelier has decided to pass his baker certificate to convert professionally, and install his bakery in a dependence on his property. Its goal: to offer 100 % organic and natural sourdough breads, all with a maximum of local products. “I have the impression that they understood my concept well during the shooting,” he continues. Final test at Beaune Hospices
The program of the show came to shoot a whole morning at his home last Wednesday. Then, on Saturday, it was at the Hospices de Beaune that the final event took place. “It was really nice,” he says. I was able to chat with other bakers, see what they offer … I was able to show what I knew how to do, my specialties. The final test, with an imposed mystery ingredient, was nice. But it is very hard to read Bruno Cormerais and Chiara Serpaggi (Editor’s note: The Jurors of the show, Best Worker in France for the first and pastry renowned for the second).
