An exceptional bösendorfer to a music lover cook
A very rare piano is exhibited for a few months at Romain Paillereau. The goal: to show this “work of art” to non-amateurs.

“Hello Cécile, I received a piano, I don’t know if it may interest you?” The message of Roman Paillereau had everything of good gastronomic news. Immediately, we imagined a rich patron in love with the good dear to the chef equipping the brand new, new Three laps Bourguillon de Fourneaux high-tech.
But “Piano” does not only equal “Fourneau”, and it is a string instrument that the chief of Friborg received … on loan. “The owner is a customer,” explains the cook. We had already made an event together with Gjon’s Tears at the restaurant, and we talked about music. I found it nice to have this incredible piano that plays on its own in the entrance! ”
An Art Nouveau Piano
The owner is in fact the one who has the “guard” for a few months of this tail piano, exceptional in more than one title: a Bösendorfer 214 Vienna Concert, from the special series “Secession”, Product in 21 copies. “The previous special series, four years ago, I dreamed of seeing it, but everything was sold before,” says Xavier Morel, boss of Fnx Music in Romont. This time, my efforts have resulted and I can show this magnificent piano. The inner panel of the lid, gilded, gives a crazy light … It is a work of art! ”

This is that: the “Secession” series takes up the codes of the artistic movement of the same name born in Vienna in 1897. On the desk, we read, gilded with fine gold, “green sacrum” (sacred spring), the motto of the group led by Gustav Klimt To protest against established culture. On the technology side, Xavier Morel almost runs out of steam by unpacking so much expertise: “Everything in the piano is designed for sound. The woods are selected and dried for five hours outdoors. It takes a whole year – including six months for decoration – to produce such an instrument, which can also play thousands of pieces on its own. ” To take the measurement of crafts, it should be noted that the Viennese brand has produced around 50,000 pianos in total since its creation in 1828, while Yamaha puts between 30 and 50,000 acoustic pianos for sale each year.
Decompartmentalizing classical music
The Romontois wanted to show this exceptional piano – sold some 275,000 francs all the same – to “decompartmentalize classical music”. And why not just exhibit it in your store? “He spent a month ago. But those who push the home door are already amateur. It’s sad, but I observe that many people dare not enter such a business. At the three laps, neighbors have already come to see the piano. What I want is to open this music to others. ”
Of course he thought of the public of the three laps, 17 points Gault & Millau and a Michelin star … “Some in the customers of such an establishment could undoubtedly offer this piano, you should not lie,” he admits. But above all, it was a question of linking two areas of excellence. “And what’s crazy is that the restaurant has just changed its cutlery and they are the same green as that of the secession dome!” We confirm, it’s striking.

And if the piano can play on its own, it is not forbidden to settle there and interpret its favorite pieces. “It’s done to play!” You just have to touch the ropes, which oxidize, ”warns the Romontois.
Beatrice Berrut on the Molleson
Xavier Morel is not at his first “decompartmentalization”. In July 2018, the young entrepreneur rose another Vienna Concert 214 – and the pianist Beatrice Berrut – in helicopter at the top of the Moléson and filmed the artist Bösendorfer playing the “consolations no 3 »but flour.

As for knowing what the 83,000 cumulative views of the video published on YouTube and Facebook will have reported to the store and in Bösendorfer, “it is difficult to quantify in this industry,” replies Xavier Morel. But the brand has not been cooled by such an initiative: the secession piano will remain “a few weeks” on the three laps, before returning to Vienna. Unless a wealthy gastronoma musician is inheritance.
