Milk and dairy products such as “Cheese Cottage”, Séré or lactose -free food is on the rise. After years of stagnation of consumption, this is good news, rejoices the ridge of milk producers (PSL).
(Keystone-ATS) After years of stagnation of global consumption, milk returns in force with consumers, who see it as a local food, rich in nutrients and entirely natural, wrote PSL Tuesday in a press release.
Products with high protein and functional added value are particularly requested. In Switzerland, the “Cottage Cheese” recorded in 2025 an increase of 23.4% compared to 2024, the serery enriched in protein of approximately 30%, the Swiss mozzarella by 9.5% and the cheese in general of 5.7%. As for milky drinks, their increase reaches 8.4% and that of consumption milk 1.1%, according to a market study delivered by PSL.
Lactose -free too
The multiplication of dairy products with reduced or exempt from lactose is one of the main engines of the current enthusiasm, also notes PSL. These products are aimed at new target groups, such as lactose intolerant people, who have so far turned to plant alternatives. In Switzerland, this segment has recorded a sharp increase with growth also exceeding 15% since the start of the year.
Another trend, according to Swiss milk producers, the craze for vegan substitution products has diminished, in particular in strongly transformed categories such as cheese imitations. Also in the international market, the signs of a return to natural dairy products are multiplying, especially in the United States.
