Valérie’s pasta: a well -kept secret!

Each year, on Monday of the Fair, after the old -fashioned Abrivado, tradition is in full swing at the Brasserie des Fontêtes.

It has been more than thirty years now that the establishment has offered a musical aperitif followed by a meal, and this July 28 edition has not derogated from the rule. This year again, it was the duo Laurent G. and Jason B. who made the guests dance during the aperitif. But once the first notes have passed, all eyes turned to the pots. Because what everyone really expects is the famous pasta of Valérie.

In a corner of the kitchen, a big smile on his lips, Valérie is watching cooking.

Discreet but delighted, she explains “At the beginning, there was only the aperitif, she says. But people stayed until the time of the Palme d’Or final, and some were starting to be hungry. So I had the idea of making pasta. “

A dish that has become cult, whose recipe remains a mystery. “Don’t ask me what’s in it, I won’t tell you”she slips laughing. “This is my mother-in-law’s recipe, Rosita. She was Spanish, she taught me everything. Since then, I have been doing the same, without changing anything.”

In music, around large tables, the plates have emptied at full speed. And now ? You will have to wait until next year to taste these famous pasta again … Unless you are invited to Valérie, but that’s another story.
